I made two different kinds of cupcakes for last weekend. Both were very good. This one was the favorite with the kids because of the chocolate. The others were lemon flavored and Tim liked those a lot. The easiest way to make cupcakes is to have a Pampered Chef big scoop to scoop up the amount and pop it into the cups quickly and without a mess. It made the process so much quicker. With these I used the big scoop for the cupcake mix and little scoop for the filling. Enjoy!
Self Filled Cupcakes

24 cupcakes
- 1 package chocolate cake mix
- 1 (8 ounce) package cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1 dash salt
- 1 (6 ounce) package mini chocolate chips (you could use regular sized but I liked the little ones a lot better.)
- Mix cake according to package directions.
- Fill paper cups in muffin pans 2/3 full.
- Cream the cheese with the sugar; beat in egg and salt.
- Stir in chocolate pieces.
- Drop 1 rounded tsp of cheese mixture into each cupcake.
- Bake as package directs for cupcakes.
